Ultimate Peanut Butter Cookies

A peanut butter lovers cookie! Ultimate Peanut Butter Cookies are filled with honey roasted peanuts, peanut butter chips and chunks of Reese's cups.
  • 1- 16 oz jar creamy peanut butter
  • 1 c butter, room temperature
  • 1 c sugar
  • 1 c brown sugar
  • 2 eggs, room temperature
  • 1 Tbsp vanilla
  • 3 c flour
  • 2 tsp baking soda
  • ¾ tsp salt
  • 1 c peanut butter chips
  • 1 c honey roasted peanuts, chopped
  • 1 c mini Reese's Peanut Butter Cups or full size ones chopped, plus more for garnish
  1. Preheat oven to 350 degrees.
  2. In the bowl of a stand mixer fitted with a paddle attachment cream the butter and peanut butter together.
  3. Add the sugars and beat on medium high speed until light and fluffy, scraping down the sides and bottom of the bowl as needed.
  4. Add the eggs one at a time, then add the vanilla and continue beating on medium high speed until light and fluffy, scraping down the bowl as needed.
  5. Sift the flour, baking soda, and salt together. With the mixer on low speed add the dry ingredients to the butter mixture in 3 additions. Mix until well combined scraping down the bowl as needed.
  6. Mix the peanut butter chips, chopped peanuts, and Reese's Peanut Butter Cups by hand using a wooden spoon.
  7. Using a large scoop, drop rounded balls of dough onto an ungreased (or parchment lined) cookie sheet. Press a few chopped Reese's (or mini) Peanut Butter Cups into the top of each cookie flattening them out just a little.
  8. Bake in preheated oven for 12-14 minutes.
  9. Allow cookies to cool on the pan for a couple minutes them move them to a cooling rack to finish cooling.
  10. Store cookies in an air tight container or Ziploc bag.
